Flaxbourne Olive Oil, Meet Bernie and Tom Casey

There is only one oil - Extra Virgin Olive Oil

Extra Virgin Olive Oil is much more than a simple accompaniment to food. As well as it tasting good it has amazing health qualities. Balancing Cholesterol Levels, maintaining healthy cholesterol levels is one of the things that is crucial for heart health, and this is something which is of personal interest to me. Olive oil has been associated with a positive impact on cholesterol levels, specifically by increasing HDL (good) cholesterol and reducing LDL (bad) cholesterol.

Consuming olive oil on an empty stomach may enhance its cholesterol-balancing effects, promoting cardiovascular well-being. This is something that I, Tom, personally do each morning. I started by taking just a teaspoon full of extra virgin olive oil and have increased it to 2  tablespoons each morning and my cholesterol levels are slowly decreasing.

Anti-Inflammatory Properties Inflammation in the body is at the root of many chronic diseases, and olive oil’s potent anti-inflammatory properties can be harnessed when taken on an empty stomach. The polyphenols in olive oil, of which there are over 20, have been shown to reduce markers of inflammation in the body, offering protection against conditions like arthritis and cardiovascular disease.

These may seem like bold claims but there are plenty of studies that have been published that back up these claims. EVOO is an integral part of the Mediterranean diet, so proof is in the eating


Info Stall and Making Pesto

 We have the ATM operating for anyone wanting cash. We also have Hogarth chocolate, market bags for all that produce, hats for the sun, black garlic and lots more.

Now is the time to be making Basil Pesto, so grab your basil(Mississippi Herbs), olive oil (Flaxbourne), parmesan and pine nuts (Pinoli)  and get processing. We have amazing pine nuts available, fresh and not even on the same playing field as the chinese ones in the supermarket. Once you have this processed to a smoothish paste, you can freeze in small portions for use all year.  But make sure you keep some fresh, put a good 2 tablespoons into a pan with a bit of extra olive oil, heat gently then toss your spaghetti through, the true taste of summer.

If you want to change it up a bit, fry off some bacon (Long Acre) first, fry it off well to get the flavour out, then add a dash of white wine, some zucchini, a chilli, a couple of tomatoes and reduce a little bit before adding your pasta. I also added a can of chickpeas, but this is not necessary, only if you want to push up the protein. Serve with some extra parmesan and glass of wine.

Verve feed your body and soul. Organic vegetables have been added to complement our flowers and add biodiversity to the farm. We have started on a small scale with a focus on finding the best seed allowing us to grow nutrient dense flavoursome food. 



Windsong

Summer Fruit is at its best now and at Windsong Orchard’s stall you can get your whole fruit salad ingredients in one stop. We have many varieties of plums that cover a full range of flavours from intensely rich to sweet and mild. We also still have a small supply of Blueberries so get in early. 



Gourmet Deli

Golden Mile

Golden Mile Produce

Loving this sunshine and the growth it produces for our plants and crops. The strawberries are flushing again, the fruit is sweet and juicy, with big flavour. Just the way we like it! Courgettes are harvesting outside so the inside crop will be retired over the next week. Beans are producing furiously, but no complaints about that as they are so fresh & sweet. What is your favourite, green or yellow? We enjoy them steamed, tossed with courgettes, onions and capsicum in the pan or on the BBQ or flash fried with garlic, salt, pepper and a tiny splash of olive oil for about 30 seconds. That's if they even make it there as they are delicious raw, so young and tender! Pop them alongside fresh peas on your snack board and enjoy them with your favourite dip (can't beat the classic reduced cream & onion soup mix!) 

Please ensure you are teaching your children & grandchildren the pleasure of fresh & raw. You would be dismayed to know how many folks we come across that have never tried fresh peas or beans.

Mississippi Herbs

Mississippi Herbs has plenty of zucchini and scallopini (pattypan squash) in mixed bags, including heirloom varieties like Striato, the Italian variety with the stripes. Such a versatile vegetable, and if you are tired of steamed or barbecued zucchini, don't forget zucchini fritters, vegetable slice, long slices tossed in oil and herbs as pizza topping, chopped and cooked with onion, tomato and basil, and don't forget chocolate zucchini cake!
