Meet Clint, Tamsyn and Charlie of Yellow Roastery Coffee

“Cold pressed coffee is formed in a similar way to red wine making,” partners Clinton and Tamsin

Banks from Yellow Roastery explained.

Speaking to the Marlborough Farmers Market, where they will have a stall on Sunday, Clinton told

us that his background in oenology - the study and science of wine making - has fused his

Marlborough background with his passion for coffee.

Having run a cafe for ten years, Clinton told us that: “Viticulture was always in the back of my

mind.”

Cold pressed coffee first originated in Japan where it has been used for centuries in a traditional

way to enhance the beloved drink.

And in more detail - this is where his study in Christchurch comes in - he explained that: “The

reason this method of extraction is unique is that coffee grounds never come into contact with

heated water, meaning that we extract a coffee with a completely different chemical profile -

creating extremely unique flavour profiles.”

That sounds too complicated for me, but I'm not the one making it - I'm just the person enjoying

the cold pressed coffee.

Clinton and Tamsin have done all the hard work, using the cold press and their favourite Yellow

Roastery coffee beans to bottle it for us, promising good coffee anywhere.

They use a cold drip tower, lined with cloth filters, their coffee beans, and filtered water. The

process takes 24 hours.

The result: cold pressed coffee with flavours that aren't as stringent.

Clinton explained that it is generally far less acidic than its hot extracted counterparts, due to the

solubility of the parts of coffee (caffeine, fatty acids, and oils) at lower temperatures.

I'm due for a tramp in the Nelson Lakes National Park next weekend, so when I pop by the

Marlborough Farmers Market on Sunday I' be sure to pick up a bottle of cold pressed coffee.

For me, the only tricky part is deciding which flavour infusion I choose to add - do I go for my safe

options of Belgian chocolate or vanilla essence?

Perhaps I'll go for the natural flavour. But if I'm daring it might be the spicy chai. There's many

others, but this is my first foray into these flavours.

Although, with Clinton's ten years previous experience at a cafe he'll be able to advise a novice

like myself on the finer details of coffee culture.

To make a fantastic iced coffee, take a tall glass and start with some ice, add your preferred amount of Yellow Roastery's cold brew, next choose your flavour, I used vanilla and top up with your milk of choice. I also added a dollop of ice-cream for extra sweetness, but not necessary. Enjoy the deliciousness, especially on these 30deg days

Golden Mile

The new year and sunshine  heralds new seasons crops. We are excited to be picking kamokamo, gherkins & cherry tomatoes this weekend. Alongside courgettes, beans, spinach, onions, broccoli, spring onions & strawberries  to name a few. 

Kamokamo are one of those vegetables that a lot of people are unfamiliar with. We describe it as a cross between a squash & zucchini. It's flesh is pale golden in colour and it has a slightly nutty sweet flavour. 

A lot of people boil or steam it and you can season and mash with a little butter  . We like to slice and cook on the BBQ or in the pan or oven until golden or grate and make fritters. It also makes a great chutney. Kamokamo are low carb and keto friendly! Come along and check them out when you are buying your sweet strawberries
