Last week we were  excited to have back the Marlborough Pipe Band (formerly known as the Blenheim & Districts Highland Pipe Band)
playing and presenting a haggis ceremony with Haggis to taste.

We had Bohally School selling truffles and Marlborough Four  Paws promoting their cause to deal with unwanted cats and dogs.


What else is happening?


In this newsletter we have a look behind the scene at our newest stall Salubre Beef, latest info from Verve, Low's Orchard, Flaxbourne Olive Oil, Golden Mile Produce, Gourmet Deli, Minghetties, and our SharpAs Tool tip. With broad beans and radishes readily available I have a delicious Ottolenghi salad.

Mahakipawa is back with new potatoes

Pedro will have his 9 flavours of empanadas, take home packs, heat and eat, perfect for the freezer when you are having visitors, just defrost and set the oven to 180deg and bake for 10 minutes or air fryer for 5 minutes

Salubre Beef

Salubre Beef: A Celebration of Local Food Production


Salubre Beef is a brand new offering to the market and is now available at the Marlborough Farmer’s

Markets, and very shortly, online at www.salubrebeef.co.nz Produced by Peter and Sue Evans, the

Wagyu, Wangus, and Hereford cattle are raised on a regenerative farm at the head of the Kenepuru

Sounds, Marlborough. The property has a rich and unique history of food production and is one of

New Zealand’s very first accredited regenerative farming operations. The farm totals 700 Hectares in

area with 220 Hectares set aside for regenerative grazing.


The 480 hectares of land not being farmed is in virgin forest and well-advanced regenerating native

forest. The podocarps featured include Rimu, Totara, and Maitai. Some of the more mature trees

would have been around when Captain Cook anchored his expedition ships Endeavour and

Resolution in what is known today as the Queen Charlotte Sounds.


From very early on Peter and Sue decided they needed, and wanted, to do things differently. As a

smaller farm they knew volume and scale was never going to be a great option for their operation.

The clear alternative was to focus on producing very high quality product and if initial reports are

anything to go by, they have certainly achieved that goal.


Equally important, Peter and Sue wanted to future-proof their operation to provide an option for

future generations. Creating, developing, and building up a reputation for delicious beef combined

with a climate friendly approach to farming felt like a more certain pathway to achieve this aim.


At Salubre Beef’s core is the pure wagyu herd, bred from David Blackmore’s famous Australian

progeny. Right alongside roam Wangus and Hereford all enjoying the fruits of regenerative grazing,

diverse, lush, grass. Each breed is unique and nuanced, offering beef lovers individual flavour profiles

in the same way wine varieties do. Terroir, breed, farming system, passion, pasture, and care for

land and animals all culminate in delicious beef, each with their own unique attributes.


The Hereford is delicate and fine grained. The Wagyu is caramel and buttery, while the Wangus

offers real ‘beefy’ texture and taste. One of the advantages of being a smaller producer is the ability

to take your time and focus more on the nuances of each breed. This means adjusting and tuning the

system to ensure optimal conditions for each, and of course, animals are only selected for market

once they reach their absolute prime.


Once selected, they begin their journey to Salubre’s collaboration partner, Georgie Moleta, aka the

Butcheress. Georgie runs a boutique craft butchery in Takaka. Here, once the animals are

appropriately aged, they are prepared for customers with the utmost care and attention to every

little detail. They’re now ready to go-to-market and they’re ready for Salubre’s customers. Now,

after years of hard work, the BBQ’s can be lit and let me just quietly say…. you’re in for a treat.

Verve

Flowers have expanded into growing vegetables. Vegetables are a natural extension to flowers as we already grow organically with no synthetic inputs. Whilst we will supply a variety of true and tested vegetables our focus is on salad mixes, flavour and nutrient dense food. We have achieved food safety registration and certification which means we can sell to commercial businesses as well as through the farmers market.


Lowes Orchard

This will be the final week for both Granny Smith and Braeburn apples. This is a good time to make your own apple cider vinegar, just chop some apples, add some sugar and cover in water. Wait untill all bubbling has stopped, then bottle.  Healthy for us and even good in those animals water troughs.

We will have our strawberries available this week, and keep your eye out as we are due to start stonefruit in the next couple of weeks! Bring on summer fruit season!

Golden Mile

The countdown to Christmas is almost upon us! And we, here at Golden Mile Produce, have been busy counting flowers on the strawberry plants and all signs are promising for a fruitful festive season! Now all we would welcome is a little more sunshine. It's a busy time on the farm with additional outdoor crops going in, showing lots of care and attention to those already growing and seeding, seeding, seeding. New seasons courgettes are tasting delicious, they always make me feel like summer is upon us. Back on the table is lovely white stemmed pak choi (or joi choi as it's known to some) So quick and easy on the BBQ to give it that great toasty flavour. Microgreens are a great we pop of crunch and flavour to your salad or sandwich. As for the strawberries you may have noticed how big some of them are. Coming out of a flush it means most plants are putting all their energy into growing and ripening that last piece of fruit on the fruiting arm and grow they are ...some of the biggest ones have been in excess of 80 grams per piece! They all taste equally as good. looking forward to seeing you on Sunday. Golden Mile Produce

Minghetties
Christmas is approaching fast and the Panettone season has begun at Minghettis.

This year we'll offer 3 version of it:

• Classico with Sultana and Home-made Candied Orange

• Chocolate

• Savoury with Roasted Bacon and Sunflower seeds, Kalamata Olives, Sundried tomato and Parmesan cheese.


We'll also have The Christmas Tart ,our Cookies, Biscotti , Sourdough bread and much more .

SharpAs Tool Tip

Pictured are several butchers knives brought in for sharpening. One of the handiest knives I have is like the two on the left. These are very good for getting around the bone on a leg of lamb, or doing any other detail work.

If you have a knife looking worn out, it can be reshaped into one of these.

Recipe

This recipe I have made many times, and once tried is always a hit, the preserved lemon and cumin bring extra flavour, I pick my broad beans before they become (what my husband calls) leather jackets. Mississippi Herbs currently has fresh picked broad beans available, with radishes available from several stalls
