Colcannon – A Winter Favourite
Traditional Irish comfort with a little extra flair
Colcannon is a classic Irish dish of mashed potatoes and cabbage, traditionally served on Saint Patrick’s Day and the feast day of St. Brigid – but I say it deserves a spot on the table all winter long. I started making it a few years ago and have since tweaked it to my taste. Now, I reckon it’s just the best.
Start with some floury potatoes – Agria is ideal. Steam or boil until tender, then mash with a generous amount of butter. While the potatoes are cooking, steam some finely sliced cabbage until just soft but still vibrant.
In a frying pan, melt a knob of butter and sauté a finely sliced onion with one garlic clove and a chopped chilli (or half if you prefer it milder). Once everything is soft and fragrant, mix it all together – the buttery mash, the steamed cabbage, and the sautéed aromatics. Season well with salt and a good pinch of white pepper.
Serve hot. It’s hearty, flexible, and goes with just about everything. Tone it up or down to your taste – add herbs, swap the cabbage for kale, or top with crispy bacon bits. Either way, it’s comfort in a bowl.

Yannis puts in a huge amount of effort, but mushrooms can be notoriously fickle. Rumour has it enoki might be on the way, and he's always experimenting with new ideas—his latest creation is pickled oyster mushrooms, made in collaboration with Three Cats. Below is a recipe to really showcase these nutritious and delicious fungi.
