IItalian Meatballs with Linguine in a Rich Tomato Sauce
Hi market friends!
This week, we have a delightful recipe for you that’s perfect for a mid-week meal: Italian meatballs with linguine in a rich tomato sauce. With pork mince from Long Acre on special, it’s a delicious and budget-friendly option.
Ingredients:
- 500g pork mince
- 6 garlic cloves, crushed (from Golden Mile)
- 1/4 cup breadcrumbs
- 1 egg (Koromiko)
- A large handful of chopped parsley (Mississippi Herbs)
- 1 onion, chopped (Golden Mile)
- 1 chili, chopped
- 2 cups chopped tomatoes (canned or fresh purée)
- 1/2 cup dehydrated tomatoes (optional), or capsicums (Homemade Kiwi)
- Tomato powder (optional)
- 1/2 cup frozen capsicums (Golden Mile may have some fresh ones)
- Salted water for pasta
- Linguine
Instructions:
- Prepare the Meatballs:
- In a large bowl, combine the pork mince, crushed garlic, breadcrumbs, egg, and chopped parsley.
- Mix everything together with your hands until well combined.
- Form the mixture into small meatballs and set aside.
- Make the Tomato Sauce:
- In a pan, fry the chopped onion and chili until soft.
- Add the tomatoes (either chopped from a can or puréed fresh ones). If you have dehydrated tomatoes, tomato powder, and frozen capsicums, add those as well.
- If you’re using canned tomatoes and tomato concentrate instead, that works perfectly too.
- Simmer the mixture until it reaches a good consistency.
- Use a kitchen whiz or blender to blend the sauce until smooth.
- Cook the Meatballs:
- In another pan, cook the meatballs until they are browned on all sides and cooked through.
- Prepare the Linguine:
- In a separate pot, bring salted water to a boil and cook the linguine according to the package instructions.
- Serve:
- You can mix the meatballs and sauce with the linguine, or for a beautiful presentation, plate the linguine first, top with meatballs, and spoon the rich tomato sauce over the top.
- Finish with a sprinkling of chopped parsley.
This easy and delicious meal is perfect for a busy weeknight, making use of that special pork mince from Long Acre. Enjoy!

GBB Marlborough
Way back in 2014, founders Nicole Murray and Marie Fitzpatrick had a lightbulb moment over a glass (or two—we’re not judging) of bubbles, leading to the creation of GBB Marlborough. Motivated by a small act of kindness they had experienced, they aimed to show those going through tough times that their community cared. What started as a simple Facebook post quickly grew into the Wellington chapter and eventually expanded across Aotearoa, with 30 chapters and over 3,000 Good Bitches baking treats for about 400 recipient organizations.
Good Bitches Baking is all about spreading a bit of kindness in our community by giving a moment of sweetness to people going through a tough time. Anyone can be a Good Bitch – it’s a very admiring and gender-inclusive term. Good Bitches are people who want to help and like to just get stuff done. You don’t have to be a master baker, because it’s your kindness that matters the most. They deliver baking to organizations that support groups of people having a tough time, such as homeless shelters, soup kitchens, hospital wards, hospices, refuges, and mental health support services.
In 2022, GBB Marlborough secured funding from the DIA’s Community Sector Research Fund to explore how 'kindness' can be an active intervention in community sectors. The research, conducted with Martin Jenkins, is now available for all to see. Additionally, GBB Marlborough has released "Mahi Pēkena Māreikura: Baking by the Good Bitches of Aotearoa," a collection of over 50 recipes from volunteers and beloved Kiwis like Jo Seagar and The Topp Twins. By purchasing this book or their stylish apron, you're supporting their mission to bring moments of sweetness to those who need it most.
As an aside, we know that life is very expensive these days and sometimes the idea of something extra in the budget is a barrier to being part of something. If this is you, please do have a look at our Cup of Sugar fund.

SharpAs Tool Tips
Scissors come in an interesting range of shapes and sizes. Pictured are two surgical scissors. With all scissors adjustment is just as important as sharpness. If you do attempt to adjust your scissors make sure you can do it without damaging the adjustment screw. Once damaged, repairs become a lot more difficult. If you have any scissors, woodwork, metal work, garden tools, utensils, knives or other, come and see me at the Redwood market Saturday mornings, Marlborough Farmers' Market Sunday morning s or contact me direct on 0274445535, cheers Ron

See you Sunday, 9 to noon, A&P showgrounds.
